Lomonaco took some time away from running his busy New York City restaurants to take part in New York City’s Wine & Food Festival’s Meatball Madness. He dished out plates and plates of these balls at the event and was a runner-up at the event.  Click here to read How to Make a Better Meatball

“People devour these meatballs. The meatballs and apricot sauce can be prepared in advance; combine the two, however, just before baking. I use Annie’s Naturals brand French dressing in this recipe because I like the authentic, close-to-homemade taste. I’m partial to the French onion dip mix from Simply Organic.” — Kerry Dunnington, author of This Book Cooks

The large quantity of chopped parsley—1 cup!—certainly gives the meatballs a toothsome herbal quality.

This dish is Sir Kensington’s riff on a class meatball recipe — adding salty cheeses like blue cheese or Gorgonzola instead of the classic Parmesan, and using a little spiced ketchup as not only a binder but added flavor.

Spaghetti and Meatballs
Spaghetti and meatballs is the ultimate comfort dish, nothing lets someone know how much you care about them more than presenting them with a bowl of the homemade stuff. I am such a meatball fanatic, in fact, that I wrote my college admissions essay about them (not a joke). Coming from a traditional Italian heritage, it is a time-honored tradition in the Aronica family to pass down this very meatball recipe from generation to generation -- my dad loves to tell the story of the day his father said to him, “Son, today you learn to make the meatballs”. The trick to making this meatball recipe is that the consistency is all about how it feels. The ratio of breadcrumbs and water to meat are difficult to quantify since it varies from batch to batch. Be conservative with both to begin with and then add more later if the consistency seems off. Click here to see Recipe SWAT Team: Meatballs.

Lugo Caffe's Meatballs
Using equal parts ground beef, veal, and pork keeps these meatballs juicy and flavorful as they cook, and poaching them in chicken stock makes them even more flavorful. Feel free to toss these with spaghetti, nestle them into a scrumptious meatball sub, or just devour them all on their own. See all meatball recipes.
