"Meat" balls
It’s 2011. I wanted to try something new. Meatballs without the meat. I’m not saying they didn’t end up good, because with the right finesse and spice they eventually did, I’m just saying sometimes classics are better left unchanged.On the upside, this version is vegetarian and diet-friendly.  The meat substitute I used has 0 grams of fat and only 70 calories per serving.  I paired the meatless balls with Shiritaki noodles, which are a great pasta alternative – only 20 calories, 0.5 grams of fat, and 3 grams of carbs per serving.

Winter Squash Gnocchi with Meat Sauce
Pumpkin or other winter squash is used as a filling for ravioli and other stuffed pastas all over Italy. In the frasche, or informal farmhouse restaurants, of Friuli, it is sometimes made into hearty gnocchi. Adapted from "The Country Cooking of Italy" by Colman Andrews (Fall 2011).

Lebanese Meat Pies
This recipe is a family favorite. It can be a main meal, a snack, or a party appetizer depending on your preference and the size you make them. There are many recipes out there for the dough and the stuffing, but this is my favorite. You may find the addition of tahini, pomegranate molasses, and labneh (strained Greek yogurt) a bit strange, but they do transform the taste of the meat and take it to the next level. Still, they are entirely optional. You can knead the dough in the food processor or by hand. I like doing it by hand especially when I am having a bad day. It is a great way to vent anger or frustration. You can punch the dough, slam it against the table, get it all out without anyone getting hurt… It is even good for the dough. The trick in keeping these pies from opening up during baking is to wet the edges of the dough with a little water before shaping them; that will seal the dough together and prevent it from opening once baked. Nearly every cook has his or her very own meat loaf recipe. Mine has a lot of “traditional’’ meat loaf touches. It’s very rich, thanks to all that cheese, and, like any meat loaf worth its ground beef, it does well hot, cold, or in between. The texture is unusually supple, fluffy, and tender, especially if you don’t manhandle the meat mix before baking it. For a smokier and spicier loaf, finely chop and add 2 to 3 minced, canned chipotle peppers in adobo to the meat mixture. Start this a good two hours before serving. Don’t let this loaf ooze too little or too much, and do use a meat thermometer.

This recipe is based on a popular Japanese stewed dish called nikujaga (niku means "meat"; jaga means "potato"), which Kathy’s mom often made when she was growing up. It’s home cooking at its best, the kind of food you want to eat when you’re tired or in a funk or under the weather. Unlike in America, stewed dishes in Japan tend to be very light and contain only a small amount of liquid, which is more of a flavorful broth than a "sauce." Like most stews, though, it reheats wells and tastes even better when the flavors have had time to meld, so don’t hesitate to make it in advance or to double the recipe to ensure leftovers. This is also a good dish for nights when people will be eating dinner at different times; just leave it on the back of the stove and spoon it out when needed. Serve with steamed rice, if you like. Mince Meat Cutlets
The Mince Meat Cutlet has been a staple of every Mangalorean household and is a much loved meal accompaniment and anytime snack. I have grown up tasting cutlets that were usually prepared for small gatherings or parties at home, and every grandma or mom would know how to whip up one in no time with the help of an apparatus which is the ancestor of today's food processor. All ingredients would go into the mincing machine and out came the mixture, ready to be fried into patties.
