There are hundreds of varieties of mangoes, but this sweet and spicy salsa uses the Kesar variety from India (where it is known as the queen of mangoes). Kesar mangoes are intensely sweet and only available for a few weeks each year. If you can get your hands on some, use them — they’re so delicious — but any ripe mango will work.
