For these cookies, the chocolate and balsamic play so well off of each other, and the coconut just adds a little nuttiness.

Until recently, I was under the impression that paleo meant gluten free, until I learned that it really meant cooking without any processed foods. What to do when you can't use processed flour such as rice flour like with gluten-free recipes? I whisk the egg whites into a firm submission in this recipe to get the same consistency that you would get from flour.

Paleo Coconut Macaroons
With only four ingredients, this simple gluten-free dessert recipe will wow your guests. These primal macaroons are made of coconut, egg whites, honey, and salt, making them an optimal Paleo cookie recipe. They'll be devoured within minutes! Rather than shredded coconut, I used flaked coconut as I wanted to try something different, and I thought it would look pretty and brown nicely. See all coconut recipes.

Every now and then I need to indulge in chocolate. I had a bag of unsweetened coconut and decided to make these Chocolate Dipped Coconut Macaroons. Brought them over to my friends house on the lake for a little get together! Vanish….. This is a great paleo recipe and gluten free recipe dessert!
