"It wasn’t until I left Rio that Bráz Pizzaria came from São Paulo to Jardim Botânico. Now every time I travel home, I run to Bráz Pizzaria to devour pão de calabresa, a generous, well burnished round bread baked inside a tube mold. Even though this may be a classic in Italy, in Rio it is still a novelty. The appeal of this bread is not a mystery to cariocas: we love linguiça calabresa any way we can get it—and this bread is all about the sausage. Make sure to use a high-quality brand that you love. I took a cue for the dough for this bread from my friend Nick Malgieri, and this bread is the absolute best food for sharing with a large crowd. Okay, so you’re going to be full before you start eating—who cares? “The Pitta M'Pigliata is a traditional Christmas dessert from the remote Sila Mountains in Calabria: baked pastry rosettes with walnuts, almonds, raisins, cinnamon, cloves and drizzled with honey. Francesco grew up baking these cakes with his grandmother and mother two weeks prior to Christmas. His grandmother always glazed them with musto cotto and took them as little gifts when visiting friends and family and enjoyed with some sweet wine, Sambuca or Grappa.”

A friend and I happened upon Hazar, in the Bay Ridge section of Brooklyn, by accident one day. After ordering an eggplant salad and some acili ezme, a spicy red pepper salad, we tore into the basket of flatbreads and were impressed with all. We also ordered lahmacou, a thin individual flatbread with a ground lamb topping, and I asked for lemon and parsley, the traditional accompaniments. The man at the oven brought them, and when I told him how good the bread was, he told me that he makes it fresh three times a day. Two weeks later I was in the basement prep room with Ramazan, the owner, making his bread. Since he makes it so often, it’s fairly simple and quick to prepare. Once the dough is risen it’s divided, rounded, shaped into dimpled disks, and baked right away.

Roasted Butternut Squash with Garlic and Sage

When roasted, butternut squash’s natural sugars caramelize, intensifying its flavor, and turning this humble vegetable into something sublime.
