Gnocchi
I had no idea gnocchi could be so simple to make, could be so tasty and was so healthy. Clearly I’ve never had Chef Fabio’s recipe. Having the opportunity to spend an afternoon with Chef Fabio at Bettolino’s Kitchen whipping up one of his classic pasta recipes was perfection. The ingredients are fresh the process is easy. Proof that making a delicious and beautiful meal doesn't have to be difficult.

The sauce for this easy pasta recipe gets a pleasantly nutty background flavor from a secret pantry ingredient: anchovies. That's right. Anchovies not only add natural salt to the sauce but also give it a bit of a protein boost. If you've ever bought a jar of anchovies to make Caesar salad dressing from scratch, and couldn't figure out what to do with the rest, use them to flavor pasta sauces and cut down on salt. For this sauce, I didn't have to put any salt into the sauce, and it tasted delicious. Click here to see 7 Healthy Pasta Recipes That Won't Destroy Your Waistline.

The Greek yogurt in this recipe is taken out of its normal element and used not for breakfast, but for dinner. It adds a subtle tangy flavor to the fresh tomato sauce, and, as you may have guessed, creaminess. Make sure to hold off on adding the yogurt until the very end — it shouldn't be cooked in the sauce, just stirred in, because otherwise the solids will separate. Green Tomato Pie
This recipe was created as a result of a little healthy competition in the kitchen, where my mom argued that our original tomato pie recipe was tried and true, and I thought it could use some sprucing up. In the end, both tomato pies were delicious, but I certainly was not disappointed to have thought up the recipe for this one.  Click here to see Green Tomatoes for Everyone.

toast
Traditional avocado toast has loads of healthy fats and healthy carbs to get you through the day - but it's missing protein. The yogurt in this recipe helps solve that issue, while adding a nice creamy texture. This recipe was contributed by Siggi's.

I'm not one for salads. They're just not indulgent enough for me. In fact, if I have to make one, I sneak a little cream into the dressing just to make a point. But when I wanted to make something quick, I knew that a salad was one of the easiest options. To force myself into salivating for one, I thought hard about what my favorite ingredients are to have in a salad and came up with chicken, corn, heirloom tomatoes, and spinach. With some quinoa and a few additional touches, I am now just a little bit more in favor of salads. I think you will be, too.  Click here to see Fast and Furious Dinner Recipes — 20 Minutes or Less.
