Pan-Seared Turkey with Gremolata
I might never have come up with this recipe if my car hadn't broken down on the way to a catering job. My client was looking forward to my cooking turkey at her home. She was psyched about the house filling up with the aroma of it roasting in the oven. Well, it took so long to get the car fixed that by the time I arrived at her house, I wouldn't have been able to cook and serve dinner until very late. And then I remembered how often I had been told that you can think of a turkey as a big chicken, so I cut it into parts: wing, drumstick, thigh, breast. Salmon with Fresh Horseradish and Parsley Gremolata
The purpose of gremolata is to brighten and enhance whatever you put it on. I make my gremolata pretty chunky. I like being able to really see and taste the different ingredients that are in it. And with the silky texture of the baked salmon, it's a perfect complement in terms of texture. Salmon is abundant in Scandinavia, but one can only eat so much of the gravad lax — cured salmon — found in every home kitchen as well as on restaurant menus. This is one of my favorite ways to give a touch of color and flavor to the ubiquitous fish and boiled dill potatoes. It’s such a pretty dish with the rosy salmon and green pistachios and herbs, but almost any fish would pair well with this flavorful gremolata. Oven-Roasted Alaska Cod Gremolata
