This is a smoky twist on a traditional "Sloppy Joe," served up mini-style on slider buns. I especially love the subtle sweet flavor that blueberry adds to barbecue sauce — who knew? Because it isn’t bound in a patty, you can also sneak much more nutritious purée into this dish. Click here to see 10 Back-to-School Recipes to Make Your Kids Happy

Chicken Salad Sandwich
This recipe was actually the result of a happy accident. I wanted to make my favorite standard chicken salad — mayo, celery, walnuts — but when I got home after a long day I realized I was out of mayo... and walnuts. And I really, really didn't want to go back out to the store (you know what that's like). So I improvised with what I did have on-hand: balsamic vinegar and arugula. The result? A Delicious, simple, and oh-so easy sandwich. Click here to see 8 Tasty Lunch Ideas for Work.

toast
Traditional avocado toast has loads of healthy fats and healthy carbs to get you through the day - but it's missing protein. The yogurt in this recipe helps solve that issue, while adding a nice creamy texture. This recipe was contributed by Siggi's.

It may be a bit of a stretch to call this dish a casserole — it's not baked and it's not made in a traditional casserole dish — but that's what I grew up calling it. This no-bake tuna casserole was a staple in my house growing up (and it's still a favorite to this day), and it's the epitome of comfort food. Noodles, cheese, green peas, and tuna — doesn't get much easier (or delicious!) than that. I've made this version a tiny bit healthier by subbing in whole-grain penne and nonfat milk, but feel free to go for full-on comfort food if you want! Click here to see Casserole Recipe Redux

Sticky Maple Pork and Apples
The sauce for the sticky maple pork with apples was definitely on point, but, as it turns out, the real clincher was that I had used “pork for pork stew” instead of chopped pork loin, which made it tough as heck and almost impossible to eat — although my boyfriend happily packed it away for the next day’s lunch, declaring, “awesome!”
