Greek Lemon Rice
This warm rice pilaf is tangy and earthy, thanks to the addition of lemon (juice and zest), shaved Greek olives, and fresh oregano. This dish would be a great side dish along with roasted or grilled chicken, lamb, pork, or fish. Plus, the pilaf is even better the next day after it's chilled overnight.Click here to see more Sweet and Tangy Citrus recipes.

Multi-Grain Pancakes
Growing up, Saturday morning meant pancakes in my house. As a kid, my Dad would perfect his pancake artwork while we challenged him to spell words and draw animals with the batter. As my siblings and I grew older, my Dad transitioned from using a thinner batter (perfect for design purposes) to a heartier one using his special blend of   grains.  This recipe is a variation on Lou's original multi-grain pancakes. The crunch of the walnuts and chewiness of the oats add dynamic body and flavor, and the buttermik gives the cakes a hint of tang.

Avocado and Egg Sandwich
This sandwich came about on one of those nights where I came home to almost no food in the fridge, unsure of what I was going to do for dinner. After a little scrounging around, and a lot of "What the hell could I possibly do with this?," it hit me. Bread, avocado, egg, and a block of Parmesan? Perfect. Pumpkin Seeds
Chef Kyle Rourke at Red Star Tavern in Portland, Ore., shares his recipe for Pumpkin Seed Dip, perfect for the fall months. The even better part is that it's vegan and filled with nutrients, using avocado as a substitute for sour cream. They serve the dip with housemade sesame crackers and pickled vegetables.

Rubs work just as effectively as a marinade, and if you're working with the grill, you'll avoid flare ups and smoke without missing out on the flavor.

Roast Beef and Cheddar Sandwich
Well, it doesn't get any easier than this. Roast beef and Cheddar are a classic combination. I guess you could call this a healthy version since it uses whole-grain bread and sprouts. Feel free to substitute whatever greens you like. See all sandwich recipes.
