Orange-Fennel Salad
By
My mother made a simple cousin of this salad: thinly sliced carrots dressed with orange juice. In Sicily, this classic salad would be a pure but simple combination of fennel, orange, and black olives. I omit the olives, and add pecans for a great crunch, and I season the dressing with paprika and fennel seed to heighten the flavor. If they’re in season, add some pomegranate seeds; their tart flavor complements the fennel perfectly and they’re packed with healthy antioxidants. Look for different winter oranges, too. Cara Cara, maybe, or blood oranges — which are a very Sicilian ingredient — are beautiful in the salad. Excerpted from MARCUS OFF DUTY: THE RECIPES I COOK AT HOME © 2014 by Marcus Samuelsson. The other day, I found myself with some leftover fennel, so I decided to make a salad with some other things that I had on hand. All I can say is that this fennel and parmesan are quite the combination. Click here to see more recipes from Cindy's Table.

Risotto with Pancetta and Fennel
One the best chef cooking tips I've ever picked up? Add a touch of mascarpone to risotto — it gives the dish that extra bit of smooth, silky richness you didn't even know was missing. This recipe is a true favorite, combining salt from the pancetta with the slight sweetness of the cooked fennel. Click here to see Recipe SWAT Team: One-Pot Meals. Carrots and Fennel Braised with Orange Zest and Honey
I paired my homegrown carrots with fennel for a soft contrast to their crunch, adding fennel seeds to brighten the flavors of the dish. Then, I added orange zest, orange juice, and honey to accentuate the marvelous carrot-y essence. I braised the duo to gently allow the flavors to meld, then finished the dish by reducing the pan juices to glaze the vegetables and lightly pan-roasted them to caramelize the sugars.
