Eggnog Popcorn Balls

Although you're probably used to seeing eggnog poured into your cup during the holiday season, this recipe gives the timeless beverage a twist. Popcorn is made with eggnog extract and marshmallows, the snack is one you'll want at holiday parties to come. Recipe courtesy of Ready Set Eat

Ingredients
  • pam® original no-stick cooking spray
  • 1/2 cup orville redenbacher's® gourmet® popping corn
  • 5 cup miniature marshmallows, divided
  • 5 tablespoon butter, divided
  • 3 teaspoon eggnog extract, divided
  • freshly grated nutmeg for garnish
Directions
  1. Spray large bowl, rubber spatula and piece of waxed paper with cooking spray; set aside.
  2. Pop kernel corn according to package directions.
  3. Remove all unpopped kernels and place half of popped corn (about 8 cups) in bowl.
  4. Place 2-1/2 cups marshmallows and 2-1/2 tablespoons butter in microwave-safe bowl; microwave on HIGH 45 seconds or until marshmallows melt and mixture blends together smoothly when stirred.
  5. Stir in 1-1/2 teaspoons extract.
  6. Pour marshmallow mixture over popped corn in bowl.
  7. Toss with rubber spatula to coat.
  8. Divide mixture and shape into 6 balls.
  9. Place on waxed papper.
  10. Garnish with freshly grated nutmeg.
  11. Repeat above steps with remaining popped corn, marshmallows, butter, extract and nutmeg.
