I used red pepper and artichoke tapenade from Trader Joe's, but you can just use roasted red peppers from a jar and chop then up as a topping. I tend to like savoury, salty things. You should adjust amounts according to your own taste. Serve cold on greens as a salad or warm with a fried egg for brunch.

This Cous-cous is so warming and flavour packed. We have it with grilled meat in winter, with cold creamy potato salad at a BBQ or just rolled up in warm tortillas with chicken breast, crunchy red onion and some mayo. You can add heat by adding chilli powder.
