Creamy Barley with Courgette and Mushroom
Recipe Courtesy of Trine Hahnemann from Scandinavian Comfort Food"Grains cooked this way are often compared to a risotto, but there is a difference in how much starch rice releases compared to barley, and so the finished texture is not the same.In Scandinavia, this creamy dish is a lot like the different porridges we eat. Porridge has been everyday food for centuries, and when I was growing up we had it for dinner once a week; often Monday would be porridge day in many households. It has become fashionable again, and in Copenhagen we even have a porridge restaurant called GR.D where they serve a lot of savoury dishes for dinner."-Trine Hahnemann

tofu
"Perfect for a summer barbecue or easy enough to cook under the grill (broiler), especially if you’re taking it ‘to go’. The sauce is just super. Once again, you can use this sauce on so much more – roasted veg, salads fish… it’s the perfect accompaniment to any meal in my view."- Julie Montagu, The Flex Foodie.Recipe excerpted with permission from cookbook Super Foods Super Fast: 100 Energizing Recipes To Make in 20 Minutes Or Less by Julie Montagu. Click here to purchase your own copy.

Italian Deli-Stuffed Loaf
Instead of making six separate sandwiches, make one large filled loaf and then slice it to serve — every slice is packed full of flavorsome ingredients. To save time you could buy the chargrilled vegetables from a deli or supermarket, although I usually prefer to make my own. You could also use an oblong loaf if you can’t find a round one. — Katy Holder, author of A Moveable Feast

Vichyssoise
Cold soup. Some people like it, some don't. It can be a pretty wonderful, refreshing experience for the palate. It's a matter of debate where Vichyssoise originates from, but the story that's told over and over credits Louis Diat, a chef at the Ritz-Carlton in New York City where he supposedly served the soup in the summer of 1917. I learned this recipe for Vichyssoise while attending the French Culinary Institute. It was good, but I'm jealous Colman Andrews snagged Gazpacho for this week's cold soup recipe — that's my favorite.Click here to see 7 Cold Summer Soups.

Coconut, Lime, and Lemongrass Chicken Salad
In keeping with many Thai dishes, the citrus notes in this salad are sweet and fragrant, with most of the bite coming from the ginger and chilli. — Catherine Phipps, author of Citrus If you love coconut, click here to try Tommy ’s Famous Coconut Shrimp
