Quinoa with Feta
My avocado and meat-loving boyfriend's response to this dish? "Babe, you killed it." While I wish I could take credit, I think it was really due to the combination of ingredients: salty and creamy feta cheese, refreshing cilantro, and sweet grape tomoatoes. Quinoa, a protein-packed grain, has a nutty quality to it that works with a variety of dishes — maybe none easier than this one. The quinoa was still warm when I added it to the rest of the ingredients, so it caused the cheese to melt a little, which was clutch. Because of the creaminess from the feta, there was no need for any additional fat or oil. A splash of red wine vinegar or lemon doesn't hurt if you feel like you need it, but honestly, I don't think you will.  Click here to see 8 Easy Vegetarian Dishes. Authentic herb chutneys were once ago only found in Indian restaurants or, if you were lucky, you may have experienced homemade chutney at an Indian friend's house. That's all changed now. Chutneys can be found on many supermarket shelves. Yet commercial chutneys never pop with taste and freshness like homemade versions. This recipe solves that problem by being super easy, super quick, and super tasty! All you need is a blender and a handful of ingredients and you'll have fresh chutney in no time!

Cilantro Salmon
Salmon is a great go-to fish — it's easy to cook, easy to split into portions, and extremely versatile when it comes to cooking methods. When it comes to the flavor profile of salmon, this is a fish that can stand up to big bold sauces — especially ones laced with herbs and citrus. This recipe lets the natural flavor of the salmon shine through, with the fish simply pan-roasted and topped with a bright, fresh cilantro sauce.  Click here to see The New and Improved Farm-Raised Salmon story.
