Baked Cauliflower Dip
This particular dip is a hot, baked cauliflower dip. It is inspired by a classic hot artichoke dip, but slightly healthier and without my nemesis (mayo). The boiled cauliflower has a creamy texture all on its own, but the addition of cream cheese, Monterey jack, and a bit of goat cheese makes for an incredibly flavorful, smooth, and rich dip. Does the fiber count make it healthy?! It’s great with fresh cut veggies or crackers, and blessedly can be made the day beforehand and baked until hot and bubbly right before serving. However, if you have to bake and serve later, don’t worry, it also tastes great at room temperature.

My teacher told me about this one day in cooking class. I just had to try it. I’ve also used this in a fondue, the egg gets a bit messy.. but that's what its all about! :) enjoy!

This mustard-based dip is good on all veggies but especially cauliflower. It was a favorite of my MIL's - a great Midwestern Cook - so I'm saving it here for my family and yours. (It is best if you make it a day ahead and refrigerate it so the ingredients have time to marry.)

A cauliflower-based dip for crudites. Serve with carrot sticks, celery sticks, red capsicum sticks, broccoli florets, purple cauliflower florets, mushroom quarters, spring onion sticks, and/or any other firm vegetables that strike your fancy. This should work with white cauliflower if purple is unavailable (shh, don't tell the recipe source!). Adapted from: http://www.purplecauliflower.com.au. The original recipe did not call for oil, but rather suggested dry-sauteing.

Very Super Bad Child Number Two loves cauliflower, so I try to find as many ways to prepare it as I can. This recipe is from the Whole Foods website. Yogurt can be substituted for the mayonnaise to cut down on the fat and calories. Preparation time listed includes chopping and steaming the cauliflower.
