carrot soup
DaVinci Master Chef Franklin Becker focuses on healthy eating at his gluten-free The Little Beet restaurant in New York City. He is also the author of a number of cookbooks, including Good Fat Cooking. Chef Becker demonstrated this soup at a master class in part because he was inspired by the land at Thanksgiving Farm. “Ginger and carrots both grow in the ground and are full-flavored,” he says. “One spicy one sweet, so they have a natural affinity to one another. The soup is simple, delicious and very nutritious.”Recipe excerpted from The Center For Discovery cookbook Feeding the Heart: Recipes, Flavors and the Seed to Belly Philosophy of the Department of Nourishment Arts.

Lazy Roast Carrot Soup
What I also like about this soup is that it is relatively free form and foolproof. No real heavy measuring, no watching of a pan or pot, cutting into beans, spending hours nearby, and yet, certainly more sophisticated than puréeing stovetop cooked carrots. It is a quiet roast of a big chopped carrot in the oven, then a quick hot bath with some broth and sautéed onion, garlic, and a nice pinch of spices punches flavor into the soup an it is finished with a squeeze of lemon and whizzed to smooth. For more great recipes like this one, visit Salvegging.

Carrot Cake Energy Bites
Recipe Courtesy of Quaker OatsCarrot cake is delicious, but it’s usually off limits until dessert. A slice of decadent carrot cake with rich cream cheese icing can reach around 500 calories, which can easily ruin your diet for the day. These carrot cake energy bites encapsulate the flavor of carrot cake, minus the calories. Best part about them is that they don’t even require baking.

Nothing represents the splendor that Alain Passard had in mind for his carrots better than his own hand-crafted collage. The recipe calls for a few simple, surprising ingredients — like cinnamon — to create a surprising flavor combination with carrots.
