Calamari Ripieni Stuffed Calamari
A stuffed calamari recipe prepared by Chef Luigi Diotaiuti of Al Tiramisu restaurant in Washington D.C. "Don’t mistake this beautiful second course for a simple, home style one. While most of the calamari dishes served in the US consist of battered and fried rings that can conceal second rate quality, this dish requires top notch ingredients. The quality of cheese, bread, and calamari itself all play a role in elevating this plate to new heights. Serve with polenta or mashed potatoes." — Chef Luigi Diotaiuti

Ceviche del Pacifico
What's the secret to this delicious ceviche recipe? In a word: tequila. Shrimp and dorade marinate in the refrigerator for a few hours in a mixture of lime juice and tequila while calamari and mussels steam in white wine, adding an interesting twist to traditional ceviche with a cooked component.

This is an extremely satisfying dish, with richly flavored rice and browned calamari that will surprise even those who think they don't like squid. The same recipe can also be made with peeled shrimp instead of calamari.

Seafood Chile Relleno
This twist on the traditional Mexican stuffed chile is rich, creamy, and delicious, filled with a medley of seafood — here I use shrimp, calamari, and bay scallops — instead of the usual ground beef. This was one of the first items on the menu at Maya, and it remains a popular item to this day.

Fried Calamari
For this twist on fried calamari, Chef Thiele adds tangy banana peppers and capers, which add a burst of saltiness to each bite. The best part? The side of marinara sauce for dipping.

Stuffed Calamari with Tomato Sauce, Polenta
Every Wednesday there is a tradition in our family – “Seafood Pasta Night.” Sometimes as an alternative I make this delicious seafood dish of Stuffed Calamari with Tomato Sauce which I serve on a bed of luscious, warm truffled polenta. If truffles aren’t your favorite, substitute with regular polenta, if short on time, use store-bought good quality Arrabbiata or Marinara sauce to go along with this dish. Calamari tubes are stuffed with sweet combination of seafood such as scallops, shrimp, and calamari which are processed to make smooth paste. Then I add cheese and seasonings to develop that slightly zesty, robust flavor and texture. It is also easier to work with the seafood in the paste form when stuffing the calamari tubes. It takes only 20 minutes to cook stuffed calamari and then, prego, enjoy this delightful dish! — Svitlana Flomm, Art de Fete

Simple and delicious, this calamari is lightly dusted in flour, salt, and pepper, and fried in hot olive oil. Serve with fresh lemon. I would enjoy a Sicilian white with Calamari Fritti — Firriato Etna Bianco 2012, Sicilia comes to mind when I think of fried calamari.
