Malaysian Flying Bread (Roti Canai)
Known as a Malaysian breakfast staple, roti canai (pronounced “rho-tee chan-ai”), or flying bread, is a flaky griddled flatbread typically enjoyed alongside a hot cup of teh tarik, (pulled tea). Roti canai is traditionally made with a mixture of white flour, water, and clarified butter (or ghee) and a secret touch of a little condensed milk. In the early 1800s, the Irish typically made due without a lot of the luxuries the rest of Europe enjoyed. One of them was yeast. Being the resourceful type, though, Irish bread makers relied on baking soda as a leavening agent and combined it with flour, buttermilk, and salt to create soda bread in cast-iron pots. With additions like butter, sugar, currants, and seeds, our version is what some traditional Irish folk might call railway cake, but we call it our soda bread with a sweet ending.

Corn bread in all its glory is celebrated in the South, and as a food editor for Southern Living magazine, I’ve tasted many renditions. There’s a constant debate over whether or not to add sugar. This is a version I’ve come up with over the years that is neither too sweet nor too savory; feel free to add more or less sugar depending on your tastes. I judge a corn bread more by its moistness than by its sweetness — there’s nothing worse than dry corn bread — so pouring cream in the center is a touch inspired by the brilliant Marion Cunningham and her famous custard-filled corn bread.
