Black Bread
"There’s nothing more distinctively Nordic than a loaf of dark bread set on the kitchen table. Each country has its own version made from varying grains, resulting in an array of textures, but they are almost always sweetened with molasses, malt or some form of syrup. This recipe is a tribute to the diversity of grains and flours available on the Nordic supermarket shelf. While it cheats a little with the use of baking soda, you cannot tell from the end product. Persevere in finding the ingredients and you will have a truly delicious loaf." — Simon Bajada, author of The New Nordic: Recipes from a Scandinavian Kitchen

Ube Bread
So, here friends, I'm excited to share with you my first attempt to make ube bread... it's not as purple as other ube breads (maybe you could add more ube to make it look ube-esque), but this bread disappeared fast from my kitchen... Enjoy!

Kvas (or kvass) is a fermented drink made from rye bread that is popular in Russia. It's technically not alcoholic because the alcohol content  is only one percent. The drink is bubbly but not as sweet as soda. Warning: this recipe needs to be prepared and fermented over-night!Photo Modified: flickr/ mrlcon/ CC 4.0

Given Hanukkah’s shifting schedule, this date may or may not match up to the Festival of Light. However, I wanted to share this Jewish cookie recipe because it’s one of my favorites and the double bake time makes it perfect for baking on a cold December day. Mandel bread is similar to biscotti but easier on the teeth, as it has some oil to keep it from being too hard. And even though Mandelbrodt translates to "almond bread," it may be baked with different types of nuts. This one is made with toasted pecans and chopped chocolate.

This dish is a little unusual - but if you love the broth soaked croutons oozing with cheese in French Onion Soup or a crispy grilled cheese sandwich with a bowl of rich chicken broth alongside, you are going to love this!
