Starting with the blackberry compote, you need to find the right ratio between lemon juice, cinnamon, and sugar, so that they complement the fruit without overpowering its delicate flavor. Then there's the dough, which should be flaky and light, like a cloud resting on top of the blackberries. Luckily, cobblers require only a few easy steps and do not take very long to bake. I’ve made this recipe for years, it is so good! I’ve also taught it for years, even at the Culinary Institute of America to chefs there, and it just blew their minds. This salsa is great with grilled shrimp to serve for Cinco de Mayo. Skewer the shrimp, cook it on the grill, and serve with the salsa (you just might need to add more key lime juice to it).

Ok, Summer is ending but watermelon and berries are still in abundance.  I had plenty of both and decided to try something a little different. I sliced and diced into bite size pieces my beautiful  watermelon and threw in these gorgeous blackberries and added a handful of freshly chopped mint.  I squeezed  fresh lime juice over fruit and  added tequila and some chambord.   It was polished off in ten minutes!
