Ask A Cleveland Expert: Your Best Thanksgiving Pie Recipe

A local bakery right here in Cleveland is winning awards and saving time every Thanksgiving. Simply Delicious Pies in Shaker Heights has been receiving great reviews due to the dedication and skill of bakers/owners Brittany Reeves and Beth Kaboth, who coincidently are sisters too. Dreaming up recipes and baking them into fruition is a dream come true and their creations are heavenly. While they can't give us all of the recipes they use in Simply Delicious Pies, Beth agreed to offer up their two favorites for Thanksgiving.

Quiche

Ingredients:

  • 4 eggs 
  • 2/3 cup half & half 
  • 8-inch unbaked pie shell (can be sweet or savory – Simply Delicious Pies makes all of its pie shells from scratch, but you can purchase one at the grocery store as well) 
  • 2 oz. your choice, cheese 
  • 2 oz. your choice, meat (we use bacon in our quiche but sausage and chicken also go well) 
  • 2 oz. your choice, vegetable 
Directions:
  1. Preheat oven to 325°F. 
  2. Beat the four eggs until yolk and whites have completely blended. 
  3. Slowly pour in half & half while mixer is on, allowing eggs and half & half to combine. 
  4. Place fillings in a pre made 8-inch pie crust. 
  5. Pour in quiche base. Bake quiche at 325°F for approximately 30 minutes, or until center is set/puffs up slightly.

Pumpkin Pie

Ingredients:

  • 3/4 cups white sugar 
  • 1 t ground cinnamon 
  • 1/2 t table salt 
  • 1/2 t ground ginger 
  • 1/4 t ground cloves 
  • 2 large eggs 
  • 15 oz. of high-quality, canned pumpkin filling (the canned pumpkin allows for a much more consistent pie) 
  • 12 oz. evaporated milk
  • 8-inch unbaked pie shell 
Directions:
  1. Preheat oven to 325°F. 
  2. Combine the sugar and spices in a small bowl. 
  3. Beat eggs in a large bowl until combined. Add pumpkin and sugar/spice blend to eggs and mix until even. Slowly add in the evaporate milk until mixture is consistent throughout. 
  4. Pour filling into pie shell and bake at 325°F for approximately one hour, or until center has set (toothpick can be inserted and is clean when removed). Allow to cool on a rack until pie can be safely handled, then move to the refrigerator.

While the sisters may have different favorites, Beth's go-to choice is the chocolate pecan pie while Brittany loves the classic apple pie, there's quite a bit similarity at the bakery too. For example, fall is the best season to bake, says Beth. While spring might have the ripe and juicy flavors of berries and summer offers abundant fruit and vegetable varieties, it's fall that really brings out the "peak pie season." And while all baking requires precision with ingredients and preparation, there's something beautiful about a bubbly delicious pie coming out of the oven. It's not looking for frosting, like the cake, and it's more substantial than a little cookie — the pie is a creation of itself.
