Celiac disease is a serious autoimmune disorder with more than 300 signs and symptoms and can lead to a number of other disorders including infertility, bone disease, neurological disorders and even some cancers. It is caused by a reaction to gluten, the protein in wheat, barley and rye. September 13 has been dubbed “National Celiac Awareness Day” in honor of the doctor who identified a link between celiac disease and diet. Dr. Samuel Gee, a leader in celiac disease research, was born on September 13, 1839.
