Ingredients
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon parsley
  • 1 tablespoon cilantro
  • 3 tablespoons olive oil
  • 1 shallot, cut into chunks
  • 2 garlic cloves
Directions
  1. Preheat the oven to 375 F.
  2. Add all ingredients to a food processor. Blend until mostly smooth, but some chunks remain. You may need to stop and scrape down the sides of your food processor.
  3. Roll the falafel batter into 2-inch balls and place on a large baking sheet lined with foil.
  4. Bake for 25-30 minutes.
  5. Serve right away.
