- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon parsley
- 1 tablespoon cilantro
- 3 tablespoons olive oil
- 1 shallot, cut into chunks
- 2 garlic cloves
- Preheat the oven to 375 F.
- Add all ingredients to a food processor. Blend until mostly smooth, but some chunks remain. You may need to stop and scrape down the sides of your food processor.
- Roll the falafel batter into 2-inch balls and place on a large baking sheet lined with foil.
- Bake for 25-30 minutes.
- Serve right away.
