Rum is by-and-large the spirit of summer, thanks to its Caribbean roots and sweet nature. Made from sugarcane, it's clearly a sweeter spirit than say, your smoky Islay Scotch. But because it's sweet, many believe that rum can only be used in a sappy, overly sweet cocktail (like the piña coladas you thought you loved in college). Not so: Much like a good whiskey or bourbon, rum is getting a sophisticated treatment from today's top bartenders. Whether it's in a remix of an Old Fashioned or a much, much better daiquiri than one you're used to, rum is just as versatile as any of your favorite brown spirits. Of course, that doesn't mean that we hate all those crazy cocktails you'd find at the beach: After all, once you see this recipe for Voodoo Juice, you'll wish it were acceptable to order these crazy cocktails everywhere.
