  • 4 canned chipotle chiles en adobo
  • 2 tbsp vegetable oil, plus more for frying
  • 1 small white onion, quartered
  • 1 jalapeño, stemmed, halved lengthwise,
  • 2 cloves garlic, unpeeled
  • 6 plum tomatoes, cored
