Vegetarian Mushroom Tacos
Ingredients
  • 1 tablespoon oilve oil
  • 6 ounce cremini mushrooms, sliced
  • 1 yellow onion, chopped
  • 1 poblano pepper, sliced thinly
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • juice of one orange
  • juice of half lime, plus one lime wedge
  • 8 six-inch tortillas, warmed
  • 1/4 cup feta cheese
  • 1 tablespoon chopped cilantro
Directions
  1. Heat the olive oil in large skillet over medium heat. Add the mushrooms, onion, and poblano pepper. Cook until the onions are translucent and the mushrooms are browned, about 7-10 minutes. Add the cumin, salt, orange juice, and lime juice. Stir, allowing the juice to cook off a bit.
  2. Fill the tortillas with the mushroom mixture, and top with the feta cheese and cilantro. Serve with a lime wedge.
