Crispy fillo meets spinach and vegan feta, for a tasty vegan appetizer.
Homemade #veganspanakopita Easy and cheap to make, and full of calcium, iron and protein without the added cholesterol and saturated fat of unnecessary animal products. Half the price and way more nutritious, I don't know why anyone wouldn't consider this #dairyfree #eggfree #vegan version Recipe: Place the following in a blender and pulse until smooth and creamy – – 1 block firm tofu – 1/2 cup milk (I used oat milk) – 1 TBS crushed garlic – 1 TBS Himalayan pink salt – – 1/3 cup nutritional yeast Transfer it to a bowl and mix through – 500grams of cooked, chopped spinach. Then begin layering filo pastry, alternating using oil (I just used spray oil) and dairy free spread (I used Nutelex) between each layer of pastry. On the bottom of the dish prepare eight layers, then spread half the filling, add six more layers of filo pastry and then the rest of the mix. On top, add six more layers of filo pastry (flat) and two extra layers all scrunched up. Brush with oil and bake for 35 minutes at 190 C #spanakopita
