Knowing that ham is often a leftover staple during the holiday season, Chef Qui created a Thai Style Ham Omelet, perfect for breakfast, lunch or dinner.

Ingredients
  • 2 cup ham scraps
  • salt to taste
  • 2 cup green onion whites
  • 1 bunch cilantro
  • 12 eggs (scrambled)
  • 1 cup fish sauce
  • 1 cup grapeseed oil
  • 1 tsp. white pepper
  • 2 cup potato chips
  • 1 head garlic minced
  • 1 cup white vinegar
  • 1 cup fish sauce
  • 1 tbsp. toasted dried thai chili
  • 1 tbsp. minced cilantro stems
  • 1 cup sugar
Directions
  1. Mix all the ingredients together. Set the stove on medium/high and in a large wok like pan add the grape seed oil, once hot add the egg mixture, the egg mixture should inflate if the oil is at the right temperature. Cook until the bottom of the omelet is golden brown, flip and brown the top side. Slide omelet off the pan and into a plate with a paper towel to dry off excess oil. Top with cilantro and serve with a side of sweet chili sauce.
  2. Mix all the ingredients together until the sugar dissolves.
