Delano (Miami Beach, Fla.)

Conceived by Philippe Starck, guests can drink and dine at the submerged bistro table and chairs in the shallow end of the "Water Salon" at the Delano, which also plays soothing classical music underwater.

CostaBaja (Baja California Sur, Mexico)

CostaBaja features The Beach Club, a swim-up pool that is attached to the resort's Mosaic restaurant. Diners can order their food and dip their feet in the shallow pool while enjoying the Damiana margarita, which is made with damiana, an indigenous plant from La Paz, and ceviche with a choice of Key lime and avocado salsa, roasted jalapeño and red onion, or lemon butter, and served with jicama salad, Mosaic salad, or house-made truffle fries.

Nayara Hotel, Spa & Gardens (Arenal, Costa Rica)

After a year of renovations, Nayara Hotel, Spa & Gardens in Costa Rica, has reopened. Kali-Kali, its poolside bar, has seats in the pool as well as poolside in the tropical shade where guests can enjoy drinks and light snacks.

Tropicana (Las Vegas, Nev.)

The Tropicana indoor/outdoor pool is one of the most popular places to swim on the Las Vegas Strip. The heated, 1,500-square-foot indoor portion boasts a swim-up bar and, in the summer, swim-up blackjack, where up to 14 players can play at two waterproof tables without leaving the water. Bets are $5 to $10 per hand and plenty of towels are on hand to keep players' hands and chips dry. Special heated drop boxes dry off players' money.

Grand Wailea (Maui, Hawaii)

One of two pools at the Grand Wailea, the 25,700-square-foot Wailea Canyon Activity Pool has been a favorite hangout for the rich and famous, like supermodel Tyra Banks, basketball player Magic Johnson, and golfer Phil Mickelson.

The activity pool is actually comprised of nine separate pools on six levels, starting at 40 feet and dropping to sea level. From in-pool volleyball to a water elevator, guests can do virtually anything in this pool, including order drinks and snacks at the swim-up Grotto Bar. The bar, located in a grotto, has treats like "munchies and crunchies," naan bread and nacho chips with artichoke spinach hummus and zesty corn black bean mango salad with a side of guacamole, and tropical drinks like the mai tai ali'i, made with Parrot Bay Coconut Rum, vanilla vodka, 'Okolehao, cherry liqueur, a splash of grenadine, lemon, and pineapple Juice, a dark rum float, and fresh lime.

Four Seasons Hotel Baltimore (Baltimore, Md.)

The Four Seasons Hotel Baltimore's fourth-floor Splash Terrace is a lushly landscaped urban oasis with the Inner Harbor as backdrop. Poolside, the hotel's pool attendants offer an array of complimentary pool amenities every hour — from delicious fruit kabobs and frozen grapes to cold Oshibori towels, sunglass cleaning, refreshing Evian spritzes, and complimentary sunscreen. Guests can enjoy cocktails while inside the pool, which is equipped with underwater speakers with music playing continuously throughout the day. 

The poolside Splash Pool Bar & Grill presents light, regional American fare served poolside. Chef Oliver Beckert has whipped up dishes like the Old Bay-spiced potato chip bucket with a kosher pickle dip; Kobe beef hot dog with smoked ketchup, sauerkraut, and pickle spear; and fish tacos, with grilled rock fish, Old Bay aioli, and mango salsa, served in soft tortillas. Soft serve sundaes include Nuts for Donuts with cinnamon donut croutons, toasted peanuts, and dark chocolate sauce, and Berried Treasures, a vanilla ice cream topped with wild berry compote and freeze-dried raspberries.

Hilton Los Cabos Beach & Golf Resort (Los Cabos, Mexico)

Both pools at the Hilton Los Cabos Beach & Golf Resort feature swim-up bars, including the Sun Fun Hut swim-up sushi bar. Swimmers can dine on sushi with a Mexican twist, like the Banana Roll, with crab, smoked salmon, cucumber, and avocado on the inside and plantain and Baileys sauce on the outside, from the comfort of the infinity pool.

Sheraton Waikiki (Honolulu, Hawaii)

The Sheraton Waikiki infinity pool has a swim up bar which faces the ocean. Swimmers can swim right up and order cocktails from The Edge of Waikiki, along the ledge of the pool.
