I’m not sure how brunch became the thing to do for Mother’s Day. I love brunch, but I’d rather be treated to a big, fat dinner. I cook enough during the week; having someone cook me dinner would really be a treat. However, making brunch foods are not only something my kid can handle, but it’s something they truly enjoy. Who am I to stop them?
My kids are known for their scrambled eggs and their pancakes; they are probably some of the best eggs and pancakes this side of the Mississippi (yes, I am completely biased). But I have come up with another recipe that I know the kids will be thrilled to try!
The inspirations behind this donut sandwich are my copycat S'mores donut recipe and this stuffed strawberry cheesecake French toast recipe. Everyone loves donuts right? And stuffed foods always go over big; so a combination of the two was long overdue.
This Strawberry Cheesecake Donut Sandwich is so simple; it’s perfect for little ones to make! These start with large bakery powdered sugar donuts, although any cake donuts would do. The filling is simply softened cream cheese, brown sugar, and vanilla.
I found that half of a cup of brown sugar sweetened the cream cheese perfectly. This does make a generous amount of filling, so feel free to halve the recipe. And as for the strawberries, each donut had enough room for one large strawberry, sliced. I listed a measurement in the ingredients, but it will mainly depend on the size of your berries and how full you want your sandwich.
Also, while this is technically a sandwich, if you add lots of the cream cheese filling (just how I like it), then you need to have napkins handy or a fork; it’s gonna get messy! I’m fairly confident this will be my kids’ new favorite recipe to make, and once again, who am I to stop them?
