Today's Snackshot is of roasted pumpkin pasta with brown butter sauce and thyme. The recipe for this fall-inspired dish comes from Annie's Eats. The longest step of the recipe is roasting the pumpkin, which takes about 25 minutes. Brown butter, thyme, and pumpkin are hearty, rich flavors that you won't get sick of if you want to pack this for lunch all week.
