Colcannon is a traditional Irish version of mashed potatoes.

Today's Snackshot is of colcannon. St. Patrick's Day is right around the corner, so start researching your Irish food and drink to be ready for the big day. Colcannon is a traditional Irish dish that is basically fancy mashed potatoes. In the version seen here, it's made with kale. In Ireland, colcannon is served year-round, frequently on Halloween.
