Silken Tofu Custard with Gingery Syrup

“Shavings of silken custard with a simple ginger-infused sugar syrup” as described by Linda Tay Esposito of Hodo Soy Beanery. This dish is a healthy, refreshing, and satisfying dessert without being too sweet.

INGREDIENTS

  • 3 inches ginger, finely sliced
  • 1 cup sugar
  • 1 cup water
  • 2 pints silken tofu

DIRECTIONS

Bring the ginger, sugar, and water to boil in a saucepan. Simmer for 10 minutes, until thickened.
Pass the syrup through a sieve to remove the ginger bits.
Scoop out thin layers of the silken tofu into a bowl and gently drizzle 2 Tablespoons of ginger syrup over it. Serve immediately.
