Lemon juice, tahini and olive oil

Sumac

Baking soda and salt

Put some chickpeas, salt and garlic into a food processor. Make sure that you measure an appropriate quantity of each that will be enough for the number of guests. Process this mixture for 20 seconds then place it in another bowl and repeat the process.

Add some water and lemon juice and process for another 15 seconds, put some tahini and repeat the same for a similar duration. Olive oil and sumac should be added while the mixture is being processed.

You should then add a pinch of baking soda into the mixture. Its purpose is not to taste but soften the hard dry chickpeas and enable them to cook faster. You are highly advised to avoid using a lot of baking soda when cooking real hummus as it will make the food taste bitter and nasty.

Cover the dish and place it in a 2 ½ quart slow cooker. High heat cooking will give you a 4-hour rest while it cooks. Low level heat will allow you to even take a nap because it'll be 8 hours before the meal is ready to be served.
