Turkey Brine

  • 1 Cup  sugar
  • 1 1/2 Cup  kosher salt
  • 2 1/2 Grams  allons cold water
  • bay leaves, torn into small pieces
  • bunch fresh thyme
  • head garlic, cloves separated and peeled
  • 1/2 Cup  pickling spices
  • 12  -14 lbs turkey
This brine was fabulous - best I have ever had. I used it on a 12.25 lb turkey but I am certain that it would work wonderfully with a chicken as well. I used a turkey brine bag (from HomeGoods) rather than the trash bags. I did not have a cooler/ice chest, so I put the bag in an empty flower pot (this helped to ensure that the liquid covered the bird) and put it in the cold garage.
