Tofu Holiday Fruitcake

Recipe Courtesy of House FoodsYou won’t have to feel guilty about eating this version of a holiday class. Fruitcake can be dense, but the tofu gives it a light, smooth texture, and also boosts its protein content.

Ingredients
  • 1/2 package soft tofu, such as house foods premium soft tofu
  • 3/4 cup sugar
  • 2 1/2 cup cake flour
  • 2 teaspoon vanilla extract
  • 3 tablespoon orange juice
  • 3 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 1 cup dried cranberries
  • 1 cup chopped walnuts
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried apples, chopped
Directions
  1. In the food processor bowl, add tofu, sugar, vanilla, orange juice and water. Puree until smooth.
  2. In a separate bowl, add flour, baking powder, and salt, and mix until well combined. Slowly fold the dry ingredients into the tofu mixture. Add fruit and walnuts, and fold again until well combined.
  3. Transfer mix to a loaf pan and bake at 350F for between 45 minutes to one hour, or until golden brown.
