These adorable mini muffins are so easy to make, and achieve the perfect breakfast balance of salty and sweet.

Preheat oven to 425 degrees F. Lightly grease a mini muffin tin.
In a large bowl, mix together flour, baking powder, baking soda, salt, Cheddar, and green onions.
In a separate bowl, mix together melted butter and oil. Add sugar and mix until well combined. Whisk in the egg. When smooth, add the buttermilk and sour cream.
Add the wet ingredients to the dry ingredients, and fold until just combined.
Scoop mixture into prepared mini muffin tin. Top generously with extra Cheddar.
Bake for 5 minutes. Turn oven temperature down to 350 degrees F. Bake for another 8-10 minutes until cheese is golden brown and bubbly. Let cool in tin for 10 minutes before removing.
