S'mores Ice Cream Sandwich

Don't just make it any sweet treat, though, and make it irresistable with these s'mores ice cream sandwiches. Ingredients
  • one 12-ounce bag milk chocolate chips
  • 2 tablespoon coconut oil
  • 4 graham crackers
  • 1 cup marshmallow fluff
  • 4 small scoops vanilla ice cream
Directions
  1. In a glass bowl over a double-boiler, melt the chocolate chips. Add the coconut oil and remove from the heat. Set aside to cool for a minute or 2.
  2. To assemble the sandwiches, break the graham crackers in half to make squares. Spread the marshmallow fluff on the sides of 2 graham cracker halves. Add the small scoop of ice cream on top of 1 side of cracker, over the marshmallow fluff. Top with the other half of graham cracker, marshmallow side down, to make a sandwich. Smash down a little to make the sandwich a little more compact. Use a butter knife to cut away any excess ice cream from the sides of sandwich. Place the sandwich in the chocolate mixture, carefully, as the chocolate may still be hot, and coat the top and sides using a spoon. Pull out of chocolate and place on parchment paper-lined baking sheet in the freezer immediately to harden. Repeat the process with the other sandwiches, alternating the baking sheet in and out of the freezer. Keep the sandwiches in the freezer until you’re ready to serve.
