A simple vegan stir-fry that takes just about 15 minutes to prep and cook. Add in whatever vegetables you have on hand, like carrots, baby corn, broccoli, or baby bok choy. Recipe courtesy of Nasoya.

Shirataki Noodle Stir-Fry
Ingredients
  • 1 package shirataki fettuccine noodles, such as nasoya pasta zero
  • 1 teaspoon canola oil
  • ½ red pepper, chopped
  • 1 carrot, julienned
  • ½ cup chopped broccoli
  • 2 mushrooms, sliced
  • low-sodium stir-fry sauce
Directions
  1. Drain and rinse the noodles. Heat oil in a large nonstick pan over medium-high heat. Once hot, add the peppers, carrots, broccoli, and mushrooms. Stir often to cook evenly. When the vegetables are almost cooked, add the stir-fry sauce and noodles to the pan. Reduce heat to low and stir for 2 minutes. Enjoy!
