This recipe uses cooked chicken and quinoa, plus a variety of raw vegetables like cabbage, onion, and butternut squash, but feel free to mix-in whatever veggies you have on hand.

Ingredients
  • 4 ounce cooked chicken
  • 1 1/2 cup cooked quinoa
  • purple cabbage, sliced
  • onions, sliced
  • mushrooms, cleaned, sliced
  • parsley
  • bean sprouts
  • butternut squash, cubed
  • 4 tablespoon reduced-fat peanut butter
  • 3 teaspoon soy sauce
  • juice of half a lime, or 1 packet of true lime crystallized citrus
  • 1/4 teaspoon red pepper flakes
  • 4 tablespoon water
Directions
  1. Mix together quinoa, onions, purple cabbage, mushrooms, sprouts and butternut squash.
  2. Add sliced chicken on top.
  3. Sprinkle on parsley.
  4. Drizzle sauce over bowl
  5. Mix together peanut butter, soy sauce, True Lime and red pepper flakes.
  6. Microwave for 30 seconds.
  7. Stir or whisk with fork.
  8. Add water to desired consistency.
