  • box muffin mix, such as Enjoy Life Foods Muffin Mix
  • 1  Cup  fruit and nut mix, such as Enjoy Life Foods Not Nuts!™ Beach Bash Seed® & Fruit Mix
  • ¼  Cup  crushed pineapple
  • 1  Cup  + 2 teaspoons cold water

Directions

Preheat oven to 350˚F. Line a 12-cup muffin tin with paper liners and set aside.

In a large bowl whisk together the Enjoy Life Foods Muffin Mix, Enjoy Life Foods Not Nuts!™ Beach Bash Seed® & Fruit Mix, crushed pineapple, and the cold water.

Evenly distribute between the 12-cup muffin tins and bake for 18 to 22 minutes until lightly browned and springy to the touch.

Store in an airtight container in the refrigerator for 3 to 4 days.
