Enjoy five-minute salmon cooked in your microwave on top of a bed of greens, with a side of steamed spinach, or alongside a warm potato salad. This simple dish requires little more than a microwave-safe dish and plastic wrap to achieve flaky, delicious salmon.

Microwave Salmon
Ingredients
  • 1 tablespoon dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon soy sauce
  • 2 teaspoon olive oil
  • salt, to taste
  • pepper, to taste
  • 1 6- to 8-ounce salmon filet
  • 3 lemon slices
  • parsley, for garnish
Directions
  1. In a small bowl, combine the mustard, garlic, soy sauce, olive oil, salt and pepper. Spread the mixture on top of the salmon filet in a microwave safe container. Top with lemon slices. Cover with plastic wrap, and microwave the filet for about 3 minutes and 30 seconds. Continue to microwave at 30-second intervals until the fish is cooked to your preference. Garnish with parsley and additional lemon slices.
