Ingredients
  • 2 pouches tuna, such as starkist kid’s creations® honey barbeque tuna
  • 4 cup sweet potato, shredded (~1 large sweet potato)
  • 1/4 cup green onion, chopped
  • 1/2 cup almond meal
  • 1-2 tablespoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 eggs, beaten
  • 1/2 cup red cabbage, shredded
  • 1 avocado, diced
Directions
  1. Preheat oven to 400°F. Spray 1 large baking pan with cooking spray.
  2. Shred sweet potato in food processor or with a grater and place in a large bowl. Mix in green onion.
  3. In a small bowl stir together almond meal, chili powder, salt and pepper. Add to the sweet potatoes and onions and combine.
  4. Stir in eggs and gently mix until well combined.
  5. Drop ~ ¼ cup of the mixture onto the baking pan and pat down.
  6. Bake for 6 – 8 minutes, until lightly browned and firm.
  7. Place on serving platter and top with 1 – 2 Tbsp. of tuna, shredded cabbage and avocado.
