Greenmarket Caesar Salad

  • cloves garlic, peeled
  • 1 Teaspoon  kosher salt
  • eggs
  • 1 Tablespoon  fresh lemon juice
  • 1 Tablespoon  caper juice
  • 1 Tablespoon  Worcestershire Sauce
  • 1/2 Teaspoon  hot sauce (recommended: Tabasco)
  • 4 Ounces  canned tuna
  • 3/4 Cups  olive oil, divided
  • 4 Tablespoons  unsalted butter
  • 1 Cup  cubed sourdough bread
  • 2 Teaspoons  paprika
  • 2 Teaspoons  dry (or fresh) oregano
  • 3 Ounces  Parmesan, grated
  • head Romaine, cleaned of any outer leaves, quartered lengthwise, washed and dried
  • small head red or green leaf lettuce, leaves separated, washed and dried
  • 1/4 Cup  fresh basil leaves, stemmed, washed and dried
This salad is great with any herbs and lettuces you can find at your local market or supermarket. For me, my version of this salad uses Romaine and basil as its backbone. The flavors are simple; just make sure your lettuce is dry so water doesn't dilute the taste.
