Greek Salad Skewers
Ingredients
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 lemon, juiced
  • 1 garlic clove, minced
  • 1 teaspoon fresh oregano, finely chopped
  • salt and black pepper, to taste
  • 24 grape tomatoes
  • 6 ounce feta, cut into 1-inch cubes
  • 24 black pitted whole olives
  • 12 cucumber halves, sliced ½ inch thick
  • 12 wood skewers
Directions
  1. Whisk all the ingredients for the vinaigrette together. Season with salt and pepper to taste.
  2. Assemble the skewers as follows: tomato, olive, feta, cucumber, olive, tomato. Transfer to a serving plate. Repeat with remaining skewers.
  3. Just before you serve the skewers, drizzle with the vinaigrette. Season with additional salt and pepper.
