Summer appetizers don’t get any easier than these salad skewers.

Whisk all the ingredients for the vinaigrette together. Season with salt and pepper to taste.
Assemble the skewers as follows: tomato, olive, feta, cucumber, olive, tomato. Transfer to a serving plate. Repeat with remaining skewers.
Just before you serve the skewers, drizzle with the vinaigrette. Season with additional salt and pepper.
