Ingredients
  • 10 tablespoon unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup chocolate chips
  • vanilla ice cream, to serve
Directions
  1. Preheat the oven to 350 degrees F.
  2. Grease a 9-inch cast iron skillet with 2 tablespoons of the butter.
  3. Place the remaining 8 tablespoons of butter and both the sugars in the bowl of a stand mixer. Beat until light and fluffy. Add the egg and vanilla, beat until combined.
  4. Add the flour, baking soda, and salt to a large bowl, and mix to combine. Add the dry ingredients to the wet ingredients. Mix on low speed until just combined. Stir through the chocolate chips.
  5. Press the cookie dough into the prepared skillet. Bake for 20-25 minutes, until the edges are crisp, and the cookie is golden and cooked through. Remove from the oven and serve warm, topped with vanilla ice cream.
