Fudgy Beet Brownies
Ingredients
  • 1 cup beet purée
  • 8 tablespoon unsalted butter, melted
  • 3/4 cup sugar, add a quarter cup depending on how sweet your beet purée tastes
  • 1 1/2 teaspoon vanilla extract
  • 2 eggs
  • 2 tablespoon esspresso
  • 1/2 cup all-purpose flour
  • 1/3 cup good quality unsweetened cocoa powder
  • 3/4 cup chocolate chips
Directions
  1. Preheat the oven to 350 degrees F, and grease an 8 by 8-inch pan with butter, and set aside. While the oven is heating, combine the beet purée, butter, and sugar. Then add the vanilla extract, eggs, and espresso. Combine the flour and cocoa powder in a seperate bowl and whisk to evenly distribute the ingredients. Combine the dry and wet ingredients, folding them together with a spatula. Finally, fold in the chocolate chips, and spread the brownie batter in the pan. Bake for 25 to 30 minutes or until a toothpick inserted in the center of the pan comes out clean.
