Easy Valentine Sandwich Cookies

Give your loved one your heart, but in cookie form! These heart-shaped sandwich cookies are pretty-in-pink with a delicious icing center. Baked to perfection in 8-10 minutes, these can be a great, last-minute edible gift.

Ingredients

1/2 cup (1 stick) butter, softened
1 egg
1 prepackaged cookie dough mix, such as package krusteaz sugar cookie mix
1/2 cup all-purpose flour (plus additional flour for rolling out cookie dough)
1 cup powdered sugar
1 1/2 tablespoon milk
1 teaspoon vanilla
red food coloring

Directions

Preheat oven to 350 degrees F.
In medium bowl, stir together butter, egg, cookie mix and ½ cup flour until dough forms, hand kneading if necessary. Place dough on lightly floured surface; roll to ¼-inch thickness. Cut dough using a floured heart-shaped cookie cutter. Place 1-inch apart onto ungreased cookie sheet. Bake 8-11 minutes or until light golden brown around edges. Cool thoroughly before icing and decorating cookies.
Place sugar, milk and vanilla in a bowl; stir until smooth. Add drops of red food coloring to tint icing to desired color. Ice the tops of cookies; place a second cookie on top of each to make sandwich cookies. Makes 12-15 sandwich cookies depending on size of cookie cutter.
