Ingredients
  • 4 quarts popcorn
  • 1 cup brown sugar
  • 1/2 cup light or dark corn syrup, preferably karo
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 1 cup peanuts, optional
Directions
  1. Spray large, shallow roasting pan with cooking spray.
  2. Add popcorn into pan and place in oven preheating to 250 degree F while preparing glaze.
  3. In a heavy 2-quart saucepan, combine brown sugar, corn syrup, butter, and salt.
  4. Stirring constantly, bring to a boil over medium heat.
  5. Boil 5 minutes without stirring.
  6. Remove from heat.
  7. Stir in baking soda and vanilla, and mix well. Mixture will foam.
  8. Pour syrup over warm popcorn mixture, stirring to coat well.
  9. Bake for 45 minutes, stirring occasionally. Remove from oven.
  10. Spread on foil that has been sprayed with cooking spray.
  11. Cool and break apart baked popcorn mixture.
  12. Add 1 cup peanuts, if desired. Store in tightly covered container.
