Add lemon zest, orange zest, and lime zest to pine nut butter for a bright and fresh take on nut butter. You can also use this butter in shortbread cookies. This recipe comes from Nut Butters by Mary Loudermilk.
This butter will get more flavorful with time, so I suggest making it a day before you plan to use it.

Process the pine nuts in the food processor until completely smooth, 5 to 10 minutes, scraping down the sides with a spatula as necessary.
Combine the sugar and zests and pinch together with clean fingers until fragrant. Add to the pine nut butter and process again until smooth.
Add salt as needed for taste.
